Made a quick gumbo it was good, easy to make. Shrimp and Scallop Gumbo
Serves 2
roux 1/3 cup of oil 1/4 cup of flour
1/4 cup of diced green pepper 1/4 cup of diced celery 1/2 cup of diced white onion 1 jalapeno diced 2 cloves of garlic small package of Okra cut up 3 cups of chicken stock 1tbsp of Creole seasoning 1tps of thyme 1tps of Fennel seed crushed salt and black pepper about 12 large shrimp skinned 1/2 cup of small scallops and a cup of rice into it, you can serve it over rice but its easy if you have enough stock to cook it in it
Make the roux stirring constantly, once it browns. Add in the veggies and cook till soft, add the spices stir till covered. Add in the Chicken stock, and stir. Add the rice, stirring alot, about half way through the rice is cooked, add the okra and some more seasoning to taste. the last 5 minutes add in the seafood. enjoy, you can add more heat to it putting in some crushed chili or your favorite hot sauce
