I usually use Pork back ribs, its a overnight process.
usually late night, i take a bottle of Amber Ale(doesn't make to much of a difference) Apple cider vinegar, bay leaves black pepper and 2 cloves of garlic and it sits in the fridge overnight.
in the morning i dry them off, place them in a dry rub, southwestern style usually, paprika, smoked paprika, black pepper, sugar, ground coriander, dash of cumin and some dried mustard garlic powder and dried onion, let stand and when needed heat up Hickory and apple wood chips and smoke them for maybe 3-4 hours on low(just a tinfoil pouch on the bbq is fine, its what i do) then when almost finished i slop on some Bourbon BBQ sauce which i make myself and usually keep that in my fridge for a long time and use it on alot of stuff. when the smoke dies down, we place chicken pieces and sausages on the bbq and finish it all while its getting all sticky with the sauce heh.

Sounds delicious. Thanks. :) We had done the wood chips in the BBQ with fish and it turned out very good.

We love entertaining and cooking. It is always nice to hear of how others do things.

Hmmmm... I saw two Super Bowls while I was in the USA. One of them was last year. I really enjoyed it. :)

for the chicken tonight its Moroccan, Rash el Hanout most north africans have their own recipe, each shop is different and so on, it means Top of the Shop.
Tastes great on bbq chicken, i use
-Paprika
-Cumin and ginger
-Tumeric
-Monks beard
-Fennel
-allspice, cardamon, galangal and orris root
-bay leaves, caraway, Cascadel chili, cloves, mace
-Saffron
some recipes can go up to 100 spices, but each household is different, the traditional way to make Rash el Hanout chicken is like a tagine slow cooked but i like this spice to burn on for bbq'ing.
I gotta get a resturant open some day lol
