Just made some Pork/liver Terraine, cooling on my deck being pressed. gonna have that as a side dish, to rolled Spleen. its a offal night and a 6$ meal ahh yea, cheaper then a steak for all this food, i guess the wine is the most expensive in each dish

I am not a big fan of offal.... Liver, kidney, spleen, cojones del toro... No thanks, as long as there is an alternative....

Its so good for ya, and it was pretty good, i even changed some minds who would have never had it ate it and ended up asking for more last night

we finished off a large Bottle of Château Cheval Blanc Red(amongst 5 people) large like a 2ltr bottle lol good times for all.

Sounds interesting. The one thing I could never try is tripe. Can't even look at it.

Well pork terraine is very easy to make anyone can do it, Ground pork, half a pork liver 2 pork kidneys(ground, in a processor) Onion, garlic, assorted herbs, red wine, matzo meal and a egg, at this point it looks like a meatloaf. then you line a meatloaf pan with long strips of bacon will it then close the bacon over, cook in the oven for an hour and half on 360, then take out place another pan of the same kind to press it and some simple soup cans for weight, place in the fridge or for canadians Outside to cool in a couple of hours when the fat is solid its ready to be sliced

Though what i made was a Bordeaux Country terraine, kidney usually isnt in it, or red wine. mm french food

I had tripe in France many times, but it was actually quite good. I am willing to try anything, even insects, grasshoppers etc.

as a chef lol i will try most things, ive never cooked with tripe really but i have eaten it many times. I am making Dorb next week which is pretty much a Hungarian Haggis, I've had haggis a few times its good. What we call Prairie Foie gras here, is Antelope liver fresh, best after hunting Pronghorn and tossing on a hot stone on a fire mmmmmmmmmmmmm Ive learned to cook with pretty much anything, i own text books on food, and reference books, ah overflows with them
